    I also have a pair of boxes with a 15" Cerwin Vega 158em and 15" Gauss 5840.

Those 515Bs are 16 ohm LF drivers. The green HF compression driver looks like an 802D and are also 16 ohm (with stock phrams).
The 808-8A compression drivers are 8 ohm (again if equipped with stock phrams).
So you basically have a mis-mash of components there that will be tough to match up with a passive crossover and sound like much.
If your compression drivers presented the same load, you would probably want the Altec N-500 type crossover, but you'll probably want to do some shopping around and get a couple of compression drivers of the same model.

As always, the best crossover will be one that is designed with your specific components.

I'd go with an Altec woofer, use the Gauss for bass guitar.

The driver on the back of that 311-90 is most likely the ALTEC 290E, with the matching line transformer which serves no legitimate purpose unless you're constructing a distributed system for an arena or football stadium. I recommend that you ditch the transformers, clean up the 311 horns, and fire those babies up! With the phenolic diaphragm you'll need a tweeter.

Either keep the original cap, or see if Bill Hanuschak will sell you the shorter caps. The screw thread and pattern will be the same.

If you plan to use the system for some kind of sound reinforcement purpose, use the N500F if you can find one. Or if you're going to use the system for home use I would contact Jeff Marquardt. He may have a suggestion for a better quality unit other than the ALTEC.
